Today’s soup is featuring kale, red potatoes, and some sausage for a little kick! This soup is our family’s way of joining the trend to eat fresh grown veggies as the first step to cleaner eating!

  • 1 Tablespoon canola oil
  • 2 garlic cloves- minced
  • 1 onion-chopped
  • 1 Tablespoon butter
  • 5 turkey mild Italian sausage links
  • 1½ pounds red potatoes
  • 40 ounces chicken broth
  • 1 bunch fresh kale
  • 2 cups whole milk
  • 1 teaspoon dried oregano
  • ¼ teaspoon red pepper flakes

  1. Let's prep the soup:
  2. Boil the 5 sausage links until cooked, set aside.
  3. Cube the potatoes and then boil them until three quarters of the way cooked-al dente.
  4. In a soup pot on medium-low heat add the oil, minced garlic, and chopped onion.
  5. Saute the garlic and onion for a couple of minutes, and then add in the Tablespoon butter. Saute until the onions begin to caramelize.
  6. Add to the soup pot the chicken broth, oregano, and red pepper flakes.
  7. Add the potatoes and simmer on low heat while you prep the sausage.
  8. Remove the casing from the sausage and crumble the sausage into the soup.
  9. Add in the milk. Allow to simmer for 20 minutes.
  10. Chop the kale, and allow to cook for 10 minutes in the yummy broth.
  11. Serve this soup with some crusty bread, Enjoy! 🙂
