  • three boneless, skinless fowl breasts halves (less than 1 ½ lb. general)

  • half cup flour
  • 2 small eggs lightly overwhelmed

  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil

  • Preheat the oven to 400 F. Line baking sheet with parchment paper, set aside.
  • the ground about 2 ½ cups corn flakes in a food processor to make the crumbs, or area in a zip-lock bag and overwhelm with a rolling pin. I choose slightly coarse crumbs (like panko) to make a crispy coating.
  • Sprinkle every bird breast with salt, pepper and garlic powder on both sides.
  • cut a pocket into every chicken breast.
  • stuffed each pocket with shredded cheddar cheese and press to seal.
