You’ll Need:

1 red pepper cut into 2-inch pieces
1 yellow pepper reduce into 2-inch portions

2 large chook breasts, cut in half of or four hen thighs
2 cloves garlic crushed
1/4 cup olive oil
1 half tbsp balsamic vinegar
1/2 tsp smoked paprika
1 tsp thyme
1/four tsp salt
1/2 tsp pepper
2 tbsp chopped fresh basil
2/3 cup black olives
1/four cup chopped feta (pass over for Paleo/Whole30)

How to Make:

Preheat the oven to 200 ranges Celsius (390 degrees Fahrenheit)

In a big baking sheet or roasting tray, upload the chopped peppers, purple onion slices, lemon wedges, and tomatoes.

In a bowl whisk together the garlic, olive oil, vinegar, paprika, and thyme. Pour 1/three of the sauce over the veggies, sprinkle with salt and pepper and toss till well lined. the region the hen portions on top of the vegetables and brush sauce. Bake inside the oven for 25 mins.
